Oatmeal Pancakes

Makes about 10 medium-sized pancakes (medium, as in, about the size of a hand).

Equipment

  • A mixing bowl
  • Frying pan or griddle
  • Spatula (or something to flip pancakes while in a pan)
  • Baking scale (optional – makes it easier to measure out the ingredients)

Ingredients

  • 2 c whole milk
  • 2 tbsp vinegar
  • 2 tbsp honey
  • 1 egg
  • 3 tbsp coconut oil
  • 170 g whole wheat flour
  • 46 g oatmeal
  • 3 g baking soda
  • 8 g baking powder
  • Oil (for coating frying pan or griddle)

Instructions

  1. Mix milk and vinegar in a bowl. Let sit for ~5 minutes.
  2. Put oatmeal in a blender until it’s more of a powder
  3. Mix dry ingredients (flour, oatmeal, baking soda, baking powder) in a bowl
  4. Mix wet ingredients in a separate bowl (milk + vinegar, honey, egg, coconut oil)
  5. (Only needed if coconut oil hardens from temperature) Blend wet ingredients
  6. Mix wet and dry ingredients until moderately mixed, it should still be slightly chunky
  7. Coat pan with oil
  8. Turn on heat medium to high
  9. Pour one pancake’s worth of batter into the pan
  10. Flip pancake when sides look hardened or batter has bubbled for a short while
  11. Cook other side for a short while
  12. Remove pancake
  13. Repeat pour-flip-remove for the rest of the batter

Mix fruit, chocolates, and/or nuts in to make extra tasty!
