Torn Pancakes

Makes a meal for two.

Equipment

  • Two medium sized mixing bowls
  • Electric mixer
  • Non-stick pan
  • Spatula
  • Egg separator
  • Baking scale (if using weights for ingredients)
  • Stove
  • Microwave

Ingredients

  • 4 large eggs
  • 2 tbsp / 25 grams granulated sugar
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 cup / 120 ml milk, any kind
  • 3/4 cup / 100 grams all-purpose flour
  • 2-3 tablespoons / 30 - 40 grams unsalted butter
  • Jam, applesauce or another fruit sauce

Instructions

  1. Start by separating the egg whites from the yolks; yolks into the first bowl, whites into the second bowl.
  2. In the first medium bowl, combine the egg yolks with sugar, salt, baking powder
    1. Whisk until smooth
    2. Add milk and whisk
    3. Add in flour, lumps are OK
  3. In the other bowl, beat the egg whites for about 3-4 minutes until they are stiff
  4. Start heating the pan on the stove at medium heat
  5. Melt the butter into the microwave
  6. Add half the butter to the pan
  7. Gently move the egg whites into the first bowl (this is called folding, don’t deflate the egg whites)
  8. Add the first bowl to the pan and cook
  9. When one site of the torn pancake is cooked, cut in half and flip each side
  10. Once both sides are cooked, then use the spatula to break into pieces
  11. Add butter
  12. Sautee the pieces
  13. Serve and add your fruit of or spread of choice
  14. Eat!
